Vegan meals on trail are really easy and simple. Here are a few ideas I like to use......
For breakfasts granola and muesli are great. You can even eat some of them dry without a problem. Try the cocoa pod granola from Woolworths.
Oats is a great option just add honey.
Lunches and dinners are also basic. I love 2 minute noodles, I think they are addictive. Bagels coated in peanut butter are fantastic. You can find bagels just about anywhere.
There are tons of varieties of packet soups.
You can also try the dehydrated meal packs from Back Country Cuisine, they have 3 or 4 veggy/ vegan options. Iv'e never tried them though. Dehydrated beans are nice and you can add them to Tortillas. You can even cover a tortilla on peanut butter for a great snack.
Of course don't forget the Trail Mix for snacks.
